Here in California, we don't have substantial 'winter' weather, especially this year we've only had a few days of light rain.  Now that it's spring, it's outside raining cats 'n dogs!  When it rains....I bake.  They go hand in hand for relaxation but it also warms up the house LOL.


So, I started out making sample cookies for Spring & Easter, trying to get a feel for what I want to do for the parties that day but the humidity seemed to affect my royal icing :(  so I wasn't too happy with the outcome.

Well, been AWOL for a few days thanks to a certain restaurant letting me 'have it my way'.  Food poisoning is the most horrible...well that's another story...

Anyway, weak & lightheaded as I was (4 pounds lighter too) I had a cake to do and had to keep to schedule.  This was a 58th Anniversary cake, red velvet & white velvet w/strawberry filling.  Pretty easy to do, since I couldn't over do it at the time:

With cookies packaged & ready to go, I was able to finish the Green Velvet Cake Pops and package them...they are now ready to go!

Is it weird to be in love with your own cookies? Lots of fun doing these as I had to get creative without St. Patrick's Day cookie cutters.   


Locally, I was only able to find "1" shamrock cutter:


For the pot 'o gold cookies, I used an upside-down pumpkin cutter and added another 'foot'.  I'd say it worked out pretty well... :))



I used a round cutter for the leprechaun hats and the gold medallions:

I decided I would do my own birthday cake for tomorrow, and that it would be a topsy turvy...my 1st one!  These type of cakes are usually done with fondant over buttercream (I didn't want to waste fondant lol), but you can do it with buttercream.  I used fondant accents and even made my own flowers...I'm so proud!
